So it's 2014 already! Seems like 2013 just flew by!
I like the New Year because it always helps me sit down and re-evaluate things. I feel motivated and excited by a fresh start.
For Christmas I got a T-Fal acti-fry, and I am really excited about cooking with it! I already made frozen french fries in it that tasted like they were deep fried, but had NO oil added in cooking! Nice, crispy fries - with no added fat! I made fried rice in it last night - very little oil needed. It was good and WAY healthier than my usual fried rice because it wasn't FRIED!
My mind is already categorizing all the foods I can make the healthy way in this new gadget! I will keep you posted on how it goes!
I'm also utilizing the cookbook the kids started for me last year so that I have healthy meal plans ready to go. One of my biggest downfalls is being too tired and too late from work to have a healthy meal planned and ready - which leads to fast food.
I definitely want to cut out on the fast food this year. It will help my life in more than the calorie front - we've been spending way too much money on eating out.
So I'm excited about the new year and continuing on my journey. I gained several pounds over the holidays and I'm resolved to get back on my schedule of working out and watching my diet. I feel so much better when I'm on a schedule. Having the kids home, the chaotic time of the holidays, and work all lead to overeating and over drinking. Hopefully I've gotten that out of my system and I can get focused back on ME again.
